Delicate Chirote – Marathi Recipe

Instructions

• Take maida into a dish.
• Add salt, ghee and mix everything well together.
• Rub the ghee nicely with maida until it gets nice coarse texture.
• Add a little water at a time and knead stiff dough.
• Do not knead soft dough or the chirote will be soft and won’t be crispy.
• Transfer the dough into a bowl, cover and rest it for about 30-45 minutes.
• In a bowl take ghee and add corn flour.
• You can use maida or rice flour in place of corn flour.
• Beat it really good until the mixture becomes nice, fluffy like cream.
• Sata for making chirote is all ready.
• Take the dough and knead it again to make nice and soft.
• Divide the dough into 6 equal portions.
• Make them even and smooth.
• Take a dough ball and knead very thin chapatti.
• Transfer the rolled chapatti into a dish, cover and keep it aside.
• Roll all the chapattis in the same way.
• After rolling all 6 chapattis take one chapatti and spread sata on it.
• Put another chapatti on it and roll it a little again.
• Spread sata again on this chapatti.
• Spread a color that you want on it. You can use different colors for each layer.
• Spread another layer on it and roll it a little again.
• Again spread sata on it.
• Repeat the process for all 6 layers.
• Spread sata on final 6^th layer and roll it.
• Make the roll nice and even.
• Cut the roll into equal size pieces or latya.
• Take one lati and roll it into a little thick disc.
• Heat up oil in a pan on medium heat.
• Drop a chirota into oil and fry on low heat.
• Fry chitore well from both sides.
• When chirote are fried well from both sides, take them out, drain excess oil and transfer them into a dish.
• Sprinkle powdered sugar when chirote are a little hot.
• You also can drop these chirote into sugar syrup if you want.
• Chirote are all ready.
• You can make 12-14 medium size chirote from 1 1/2 cup maida.
