Ingredients

  • Ghee
  • Cumin seeds
  • Cinnamon
  • Bay leaf
  • Cardamom
  • Black peppercorns
  • Cloves
  • 1 tsp Besan / Gram flour
  • Finely chopped Onion
  • 4 Tomatoes pureed
  • Turmeric powder
  • Red chili powder
  • Kitchen king masala
  • Coriander powder
  • Salt
  • Water
  • 500 gm Chicken

Instructions

  • In a bowl take chicken and add turmeric powder, salt.
  • Mix well and keep it aside.
  • Heat up gheen in a cooker.
  • You can use dalda, vanaspati, butter or ghee instead of ghee.
  • Add cumin seeds and let them splutter.
  • Add bay leaf, cinnamon, black peppercorns, cardamom, cloves and mix well.
  • Add onion and mix well.
  • You can use grated onion instead of chopped one.
  • Fry the onion until it gets nice golden color.
  • When onion turns light golden add tomato puree and mix well.
  • Cover and cook on medium heat until tomato puree is reduced a little for about 4-5 minutes.
  • Open the lid and mix once more.
  • Add kitchen king masala, red chili powder, coriander powder and mix well.
  • You can use garam masala instead of kitchen king masala.
  • Fry until the spices release oil.
  • When this masala is fried well, move it a little aside in the cooker.
  • Add besan and roast it a little for about a minute.
  • You can fry the besan in little oil too if you want.
  • Mix the roasted besan well with the spices.
  • Add marinated chicken and mix well.
  • Add a little water, salt and mix well.
  • Be careful while adding salt as we have already added salt while marinating the chicken.
  • Close the lid and cook on medium heat until just 1 whistle.
  • Chicken masala is already.
  • Chicken masala goes well with roti, naan, plain paratha.
